Sausage Bean Soup


Prep / Total Time :25 minutes      Makes 6 to 8 servings

3/4              pound bulk Italian sausage
1/2              cup chopped onion
1                 glove garlic , minced
1                 can (15 ounces) butter beans , rinsed and drained
1                 can (14-1/2 ounces) black beans, rinsed and drained
1                 can (14-1/2 ounces) diced tomatoes , undrained
1                 can (14-1/2 ounces) beef broth
1                 tablespoon minced fresh basil or 1 teaspoon dried basil
2                 tablespoons shredded Parmesan cheese

In a large saucepan , cook sausage , onion and garlic over medium heat  until sausage is no longer pink ; drain. Add the beans , tomatoes  , broth and basil . Bring to a boil . Reduce heat ; cover and simmer  for 10 minutes . Sprinkle  each serving with Parmesan cheese .

Canned beans and quick cooking sausage make this tasty  soup a snap to prepare  . It just takes minutes to simmer .
