Mexicali Beef potato Topper

Prep / Total time: 30 minutes        Serves 4
A cheesy ground beef sauce with the kick of picante makes a Southwestern-style topping for steaming baked potatoes in this fun and quick-cooking dish

1                pound ground beef
1                can (10-3/4 ounces) Campbell's Condendensed Cheddar Cheese soup
1                cup Pace Picante sauce
4                hot baked potatoes
           ** Sour cream (optional)**
           ** Sliced pitted ripe olives (optional)**

1.             Cook the beef in a 10-inch skillet over mediun-high heat until well browned , stirring often to separate meat . Pour off any fat.
2 .            Reduce the heat to medium . Stir the soup and picante sauce in the skillet and cook until the mixture is hot and bubbling . Spoon the beef mixture over the potatoes . Top with sour cream and olives if desired .

    This sure is a quick meal to "throw" together. I stuffed some potatoes with broccoli and cheese tonight for dinner. I added a few chili peppers to mine:)

Hi Louise , The kids had a Happy Halloween , it was severe weather storms with flash flood warning here , the kids told their daddy they wanted him to drive them trick or treating if the rain continue . :D , thankfullu it stop raining around 3PM and off they went .
