Pistachio and Pine Nut Brittle

Serves 10 (serving size: about 1 ounce)  Prep: 2 Hours, 20 Minutes

Pistachio and Pine Nut Brittle is a sweet spin on the traditional peanut brittle. This nut 2/3 cup sugar

1/3           cup light-colored corn syrup
1/4           cup water
1/2           cup unsalted dry-roasted pistachios, coarsely chopped  


1/3           cup pine nuts, lightly toasted
1/4           cup dried cranberries, coarsely chopped
1-1/2        tablespoons unsalted butter, softened
3/4           teaspoon baking soda
1/2           teaspoon vanilla extract
1/4           teaspoon salt

1.      Line a baking sheet with parchment paper.
2.      Combine first 3 ingredients in a medium, heavy saucepan over medium-high heat, stirring just until combined; bring to a boil. Cook, without stirring, until a candy thermometer registers 335° or until syrup is dark golden brown. Remove from heat; stir in pistachios and remaining ingredients (mixture will bubble). Quickly pour mixture onto prepared pan; spread to about 1/2-inch thickness. Cool completely (about 2 hours). Break brittle into bite-sized pieces.

TIP::
Make-ahead tip: Cool the brittle completely, break into chunks, and store them in an airtight container at room temperature for up to one week.
Candy also includes dried cranberries, giving the brittle a festive color of red and green (from the pistachios) if using for the holidays , but good all year round .

  2. I have never, ever made brittle, Nee. Pistachios and Cranberries! What a combination! I bet the kiddies loved this one!!! I just remembered I have a brittle recipe poem somewhere, I must find it so you can show the children:) Thank you so much for sharing, Nee...

  3. Hi Louise , I love brittle , we made 3 batches before we finished , you can add different things to it , I also put cherries , pecans and peanuts , really whatever I have on hand . I just left your house and printed the poem for them they are going to be so happy , now you know what I will be doing tomorrow :-D .       Honestly, I don't know if Pinterest has tried to help me or not. I can not get to my email at all now. It's getting quite frustrating but I will not let it ruin my days, lol...I'm planning a post for tomorrow, Groundhog Day, but I don't know if it will be up in time or at all, I did however think of the kids when I saw these cute groundhog recipes. Here's the link if you want to check them out. I actually found this on Pinterest and tried to send it to you through them but, they say I'm not following you!       Thanks for the link , the kids will be thrilled , 'Kitchen Fun With MY Three Sons' , Jill seems like a sweetie .
      I think the weather has a lot to do with your email , I notice that a lot of bloggers are having PC problems since the weather turned so nasty .
      I wish they make up their minds .... first I wasn't following you :-D . I don't think they have gotten back to you , I emailed them once a week . I do think they have grown so large so fast , they are like blogger ... other bloggers have to help . I go to their help center and there are others with the same problems , but no one has solved it yet .
      I have you , Ginger and Catherine on my following list ... Catherine has a give away and I entered and it was 5 things to do , one was followed her on Pinterest , I did , but I don't know if I am following her .
      Don't worry your head , we will tackle this when the weather get better .

      P.S. The girls put the poem in their folder and said they are making a cookbook , Louise my kids are so funny . I haven't emailed you since it went down .     3. Guess what, Nee!!! My email is fixed!!! I was going to write you back through reply but you don't have it set up that way through blogger. I know the last think you want to do is tackle another problem but you might want to check into it when you get three minutes, lol...I know Dottie has been having a problem with. I'll finally be able to email her back too.

      I don't know what the problem could be with Pinterest. I haven't heard from them and you are the only one that I can't add to my Pasta Board. It says I'm not following you! I think I may try again to repin something from your board and see what happens.

      I'm so glad you and the kids liked the website. You have some real gems there:) That is just too cute that they are making a "lyrical" cookbook. I'll have to dig out some other poem recipes for them. I have some on my blog. I'll need to find them:) Marion is doing GREAT. On Wednesday I will be posting her latest crochet creations just wait until you see them. They are adorable!!!

  4. Dear Nee, this is a very good looking recipe. I have never made Brittle of any kid, but I love to eat it! Your photo is so delicious looking that I wanted to take one just to taste. Pistachio and Pine Nut Brittle is so different from the original. being a lover of all nuts (that sounds funny) I know that I would love this one just as much. I think the cranberries will give it a sweet touch as the other nuts are more savory. Great combo...thanks for sharing..Blessings on a great weekend! Dottie :)

  5. Hi Dottie , My kids and their friends love it and so do the grown-ups . It's fast and easy , you can experiment with it with any nuts or a combination of nuts . I also put coconut n it some time , my kids has a lot of ideas . Thank for dropping by and have a blessed weekend :).
