Prep / Time : 45 minutes Makes 4 serving (serving size : 1-1/4 cup)
9 ounces refrigerated fettuccine
2 tablespoons olive oil
12 ounces lean ground pork
1/2 cup grated carrot
3 garlic cloves minced
1/2 cup red wine
1-2/3 low-sodium marinara sauce
1/2 cup chopped fresh basil , divided
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
**Steamed Sugar Snap peas (recipe below)
1 . Cook pasta by package directions , Drain
2. Heat olive oil in a large skillet over medium-high heat . Add pork , carrot and garlic ; saute 4 minutes or until pork is done . Add wine ; cook 1 minute . Add marinara , 1/4 cup basil , salt and pepper , bring to a simmer . Pour sauce over pasta . Sprinkle with remaining 1/4 cup sauce

Steamed Sugar Snap Peas

1 tablespoon chopped fresh mint or tarragon
1 tablespoon butter
1/8 teaspoon freshly ground black pepper
Steam peas 5 minutes or until crisp-tender ; drain . Combine peas , mint ,butter , salt and pepper ; toss well.

ReplyDeleteI love Bolognese but usually make it with ground beef. This is a wonderful twist to the usual. ;)

DeleteNice spin on Bolognese, Nee. Gotta love that basil and those sugar snaps. I really want to grow them next year. They are the best when freshly picked right from the garden. Perhaps the kids will plant a kitchen garden come Spring:)

DeleteHi Nee, let's try this again, had written my comment and then blogger would not let me enter it! Anyhow, what a wonderful recipe this is! I love Pasta Bolognese, but have not made it with pork. I usually use beef. Have to try this..Also, one of my very favorite veggies is the sugar snap peas! I love them. I make them plain boiled with a bit of butter on it. Love your version of steaming and adding mint. That is what is nice about sharing, you learn so much and get tips from your fellow bloggers. Thanks, blessings, Dottie :)
