Cook Time: 25 Minutes Prep Time: 15 Minutes
Makes 4 servings
Cod gets a twist with lemon and dill. Aluminum foil can be substituted for parchment paper.
4 (5-oz.) fresh cod fillets
1 teaspoon salt
1/2 teaspoon pepper
2 lemons, sliced
1/4 cup shredded carrot
2 tablespoons fresh dill
2 tablespoons fresh parsley
2 tablespoons butter
1. Preheat oven to 375°. Sprinkle fillets with salt and pepper.
2. Cut parchment paper into 4 (13- x 9-inch) rectangles. Place 3 lemon slices crosswise in center of 1 parchment rectangle. Top with 1 fillet. Repeat with remaining lemon slices, fillets, and parchment paper rectangles. Sprinkle fillets evenly with carrot, dill, and parsley. Top each fillet with 1/2 Tbsp. butter. Fold 1 side of parchment paper over fillets; tuck excess parchment under fillets, pressing folds to form a crease.
3. Bake at 375° for 20 to 25 minutes or until fish flakes with a fork. Serve immediately.

DeleteDear Nee, This looks really yummy. I always love the way fish tastes when it gets wrapped in foil or parchment paper. The French call it, "en papillote," the Italians call it, "al cartoccio, It makes the fish taste very moist, and clean up is a snap! ReplyDeleteBeing from the south and especially Louisiana , there are so many different fish dishes to enjoy . "en papillote" I will have to brush up on my french , I hope to be going back there soon , but I will be eating more than fish . For the next 3 weeks I will be making the menus out for the restaurant . I was also thing of posting some of my bro-in-laws cooking videos , epecially the one with the Louisiana BBQ shrimp . DeleteI would think that you are the expert when it comes to fish and shellfish, coming from Louisiana. That would be a wonderful idea to see what you brother-in-law is up to, would also be a good way to promote the restaurant. The one you mentioned about the BBQ with the shrimp I am sure would be very interesting to many people that follow your blog. I know that I would be glued to the PC for that one. Carano, is in Northern Italy, if I remember. Near the Italian Alps? It must be gorgeous to be able to visit that area. It is always so interesting to see where everyone is from. I am not promoting the restaurant , My hubby family is in the Hotel / Caniso business and the Ferrari --Carano wine business . My bro-in-law is a chef cook with the Reno Road Show with many more chefs . Yes Carano , Italy is a beautiful country , most of Italy is , at least the parts I visit I met my hubby when they open the Eldorado Resorts here and I enjoy helping out when I can . Gregg is head of the restaurants in Reno and here, they are a fascinating family . Oh , dear Dottie , The stories I could tell you maybe when things settle down we can talk more .
