Shrimp Vodka Pasta

Prep / Total time : 30 minutes       Serves  4

Sauce is tossed with refrigerated fettuccine and sauteed shrimp for a quick and filling one-dish simple vodka-marinara entree

9              ounces refrigerated fettuccine
1              tablespoon olive oil , divided
12            ounces large shrimp , peeled and deveined
1/3          cup vodka
3             garlic cloves , thinly sliced
1-1/3      cups lower-sodium marinana sauce
1/3         cup chopped fresh basil , divided
1/4         cup heavy whipping cream
1/2         teaspoon kosher
1/4         teaspoon black pepper
       **Creamed spinach and Mushrooms**

1.      Cook pasta according to package directions . Drain
2.      Heat 1-1/2 teaspoons oil in a large skillet over medium high heat . Add shrimp; saute for 4 minutes or until done . Remove shrimp from pan .
3 .     Add 1-1/2 teaspoons oil and garlic to pan ; saute 1 minute . Carefully add vodka ; cook 1 minute . Add marina , 1/4 cup basil , cream , salt and pepper , bring to a simmer . Stir in pasta and shrimp. Sprinkle with remaing basil .

  2. Hi Nee, What a spectacular recipe this one is! A la Vodka sauce is one of my favourites. Just went last night out for dinner with some girlfriends from my job where I used to work. We always go Italian, and one of the ladies had something very similar. It is sooo good and yummy. The sauce is light and does not have as much acidity from the tomatoes. Your recipe is so easy and great to use up that left over pasta. Yummy for sure! Blessings, Dottie :)

    1. Hi Dottie , I love this recipe , with the holidays coming , there is always left over turkey and ham , I use them instead of shrimp .     1. I sure did, Nee. I saw this recipe on Pinterest for freezing apples that are all prepared for Apple Pie. I may try it this week. We'll see...I know for sure Marion and I couldn't possibly eat all these apples, lol...

    2. Peeling is the hardest and after that it's smooth sailing and worth the effort . I once canned all the apples , now I freeze them . :D give Marion a hug

    4. I use Freezer zip-lock bags and put in the amount I want to use , thay stack easy and don't use as much space and the freezer containers . The kids would help you until they get their fill on apples , I told my kids you went apple picking and they ask was you going to make some Apple Oatmeal Crisp , I told them heck no , you was going to freeze those apples for later use , now they are off to find my Apple Betty recipe :) lol

    5. I think that is the same as the recipe I found but I'll have to look on my Pinterest board because I think you add all the ingredients before you freeze them.

      I wouldn't want the kids to hurt their tiny fingers peeling all these apples. Tell them I'm still full from their Apple Crisp but I am going to make Apple Dumplings! Apple Dumplings are very very popular in Pennsylvania!

Oh Louise , I had to peeled the ones for their Apple , they was eating as they peeled . :D yes you do add all your ingredients , I always have to check my recipes , no matter how many times I make a dish , freeze or can . Thank you for reminding me , Apple Dumplings are very popular at my house , hubby loves them too. I have an Apple Dressing recipe I will have to look up , thanks for the reminder. lol
