Parmigiana & Pork

1 -1/3      cups uncooked spiral pasta
2             cups meatless spaghetti sauce
1             pork tenderloin ( 1 to 2 pounds)
1/4          cup egg substitute
1/3          cup seasoned bread crumbs
3             tablespoons grated Parmesan cheese , divided
1/4          cup shredded part-skim mozzarella cheese

1.             Cook pasta according to package directions . Place spaghetti sauce in a small saucepan ; cook over low heat until heated through , stirring occasionally .
2.           Meanwhile , cut tenderloin into 8 slices , flatten to 1/4 thickens . Place egg substitute in a shallow bowl , combine bread crumbs and 1 tablespoon Parmesan cheese . Dip pork slices in egg sucstitute , then roll in crumb mixture .
3 .          Place on a baking sheet coated with cooking spray . Bake at 424*F for 5 to 6 minutes on each side or until meat is tender . Drain pasta ; serve with spahhetti sauce and pork . Sprinkle with mozzarella cheese and remaing Parmesan cheese .

This recipe brings home the flavors of Italy with this tantalizing Parmiginana . Baked in minutes , the crispy yet moist pork tenderloin makes an easy dinner that your family will request .

    A wonderful recipe and looks like a comfort food to me. I love Parmigiana and I love the pork. I usually make chicken...I have to try the pork. I also love the spiral pasta. (but I love any kind of pasta) Haha Simple, beautiful and delicious all at the same time. Yummy..Thanks for sharing...Have a great rest of the week.

      Not only is it comfort food but it's also fast and easy . ;-D ... I use pork for the other white meat ... I try to shy away from so much beef ... variety is the key .

    Sorry to be among the missing this past week. It's been crazy! You'll see the reason why in tomorrow's post:)

    I love the simplicity of this recipe. Spirals are a personal favorite of mine. How'd you know, lol...I'm surprised at the egg subsitute. I've been using egg whites to do breading lately. They work fine. Never thought to use the substitutes though. I'll have to check into that.

    Hope all has gotten back to normal in your corner in the world. The kids are probably back to school now. Times sure flies!!! Thanks so much for sharing, Nee...

      I was a bit worried , I thought it was the bad weather . I am a day late so I will hop over there now to check you out .

      A friend told me about egg substitutes and it do stop with the waste of the egg yolks .
      Things is normal hear , just getting the kids back to school .

    4. I keep telling her to wiggle her toes Nee but she is sooooooo stubborn! She is feeling so much better though with each passing day:)

    5. Yes I was and with the holidays ... I had to put my butt in gear and Sha also had a birthday in December , I was able to give her the type of party she wanted , she was a trooper , said mama , we can wait until next year and she can have 2 birthday parties . Kids are thinking all the time .
      Marion sounds like Baby Boy , he's a stubborn little rascal (giggling) .
