Rainbow Salad

Hi everyone ,
I have been away for awhile  not by choice , but by need of family. Hubby's aunt broke her leg , after 2 /3 weeks the doctors put it in a walking cast , boy was she happy , so were we , now we don't have to dodge that dang scooter . I think she tried to deliberately run over her caregiver .
Hubby asked her how she broke her leg , she said singing and doing the twist to Chubby Checkers  Doing the twist song  with a sip of wine .(aunty is 87) giggling , aunty slipped outside in the garden . She likes to punch his buttons (a true Italian lady).
The kids want to go to the ranch in Reno and then to Sonoma / Napa valley ,wine country  to visit hubby's dad . As you know they are having water shortages there , Baby Boy  said , mama we can drink wine , gramps has lots and lots of wine in bottles and kegs . The kids love to see how the wine is made , go out to the grape fields ,pick the grapes of the vine .
 
I will leave you my favorite salad recipe , enjoy .

Time: 15 minute

1/2          teaspoon orange zest
1/2          cup orange juice , preferably freshly squeezed
1/4          cup cider vinegar
1             tablespoon extra-virgin olive oil
2             teaspoons fresh oregano , chopped, or 3/4 teaspoon dried
1             teaspoon Dijon mustard
1/2          teaspoon salt
1/2          teaspoon freshly ground pepper
1-1/2       cups bell peppers , chopped
1-1/2       cups broccoli florets , chopped
1             cup shredded carrots
1/2          cup radishes , diced
1             tablespoon red onion , minced
1/2          cup Orange-Oregano Dressing


1 .    To prepare dressing: Place orange zest and juice, vinegar, oil, oregano, mustard, salt and pepper in a jar. Cover and shake to combine. (Makes about 1 cup.)

2 .    To prepare salad: Combine bell peppers, broccoli, carrots, radishes and onion in a medium bowl. Add 1/2 cup of the dressing and toss to coat. Refrigerate until ready to serve.
(Refrigerate extra dressing for up to 1 week.)

  1. Boy, you've had a lot to handle! Hope auntie is getting better. Who knew the twist was so dangerous? ;-) Great salad -- love all the flavorful ingredients in it. Happy a great vacation! And drink a glass of wine for me. And one for Mrs KR. We take the issue of water conservation seriously. :-)

      I was blessed to have a caregiver , Aunty is a sweet lady (mostly) when she asks up , I tell her she won't get her afternoon juice(wine) .I will tip my glass to you and Mrs. KR

    I'm sooooooo sorry I haven't been here. As you know, things have been pretty crazy around here too. So glad to hear Aunty is on the mend. I can imagine her "attacking" with her scooter, lol...Marion is darn right dangerous when she gets behind one of those things, which has been quite often lately. Things are still crazy here but "good Lord willing and the creek don't freeze", perhaps I will be back by September too.

    Have a WONDERFUL vacation!!! Tell the kids Wine is a GREAT substitute for water, lol...I grew up on drinking wine and I am none the worse for it! I'm so delighted to hear you are going to be able to get away for a while and that the children will be able to have more FUN before it is time to go back to school:)

      I understand you have a lot going sweetie ...as the old saying goes when it rain , it pours.
      Louise , it so funny , these old ladies on scooters rolls their eyes at you and seem to thinking , stand there and they will run over your musty butt and snicker at you .

      Louise , wine is good for kids , they love playing taste test the wine like the people do at Dad's winery .
      Starting vacation a little late because of aunty's leg , the kids wouldn't leave without her .

    So happy to hear that your "Aunty" is doing much better. Everyday I hope she will be getting back to normal soon. I am doing well..Still taking it slow, but enjoying getting back to my blog and friends. Your visit to the ranch with the kids and hubby sounds fabulous! Sometimes we need to see the world from a different view. What better way than with wine and the vineyards. Sounds like a fun and relaxing time...I hope that you enjoy your trip, be safe and see you soon...Your Rainbow Salad recipe is awesome! Especially in the summer and it is hot, I always look for a good salad dish...thanks for sharing!

      Thank you for the well wishes for aunty , She' up and raring to go .
      I am so please you are back , but remember take it slow and easy. We try to get to the ranch 2/3 times a year to keep a check on things hubby has a great staff there , it is his family home .His brothers keeps tab on it , they are in the hotel/casino business.
      one is a chef , oversees all the restaurant here and Reno , I have some videos of him making good food in the kitchen .. I will post some when I get back .Rainbow salad is my favorite for the summer.
