CHICKEN SALAD WITH BLACK PEPPER-MUSTARD DRESSING & SHAVED BRUSSELS SPROUTS

Start to finish: 40 minutes              Makes 4 servings

For the dressing:

1/4            cup plain low-fat Greek yogurt
½              clove garlic, smashed or roughly chopped
2               tablespoons  olive oil
1               tablespoons  Dijon mustard
1               tablespoon  red wine vinegar
1               tablespoon  water
¼              teaspoon  kosher salt
½              teaspoon  ground black pepper

For the salad :

1              Granny Smith apple, peeled, cored and diced
1              teaspoon  lemon juice
1              pound  Brussels sprouts, shaved or thinly sliced (about 5 cups)
1              pint  grape tomatoes, halved
¼             cup almonds, toasted and roughly chopped
1              boneless, skinless chicken breast, cooked and chopped or shredded (about 1 cup)
1              scallion, chopped
1              ounce  Parmesan cheese, broken into shards
Lemon wedges, for serving

1 .       To make the dressing: In a blender combine all ingredients and blend until smooth. Set aside.

2 .       To prepare the salad: in a large serving bowl toss the diced apple with the lemon juice. Add the Brussels sprouts, tomatoes, almonds, chicken and scallion. Drizzle ¼ cup of the dressing and toss well to coat. Top with Parmesan shards. Serve with the remaining dressing and lemon wedges on the side.

      Grilling is over for the summer , but salads are here year round .
      The salad is mine , but the dressing is Jonny's and he was so please that you said it is the icing on the cake , he had a grin from ear to ear . It looks like you and I will have more chefs in our family , now that will be a hoot . stay tune and on the

    What a lovely salad this is. All your ingredients are not only a perfect match, but it is healthy as well, especially with the veggies and I love the nuts. Nuts always adds that crunch and texture to a fabulous dish! Looks so beautiful on your plate. I am getting hungry for some....Thanks for sharing have a blessed Weekend... Today is the feast day of St. Francis Assisi ...St. Francis had a great love for animals and the environment. I will say a prayer to St. Francis for your animals that he keeps them safe and protected. Dottie :)

      Salads can't miss with plenty of veggies and fruits and nuts is always a good choice for the crunch and is also healthy for you .
      Yes today is feast day of Saint Francis Assisi .
      I am an environmentalist as you can tell on my left sidebar , I am a member of Nature Canada and Polar Bear International and all endangered species .

    2. Thanks Nee, I knew you were an environmentalist and that is wonderful that you are a member of Nature Canada and help the Polar Bears. I am as well. I love all animals, even though I don't have my sweet Angel Kitty anymore, I still try to belong to any type of animal rights programs. That is why I wrote about saying a prayer for your babies. I do pray for all God's creatures every day. I posted a status on Facebook about St. Francis and I said that we all should say a prayer and be activists for all animals, as they need a voice too.
