Icebox Cookies

TOTAL TIME: Prep: 20 min. + chilling Bake: 10 min./batch MAKES: 102 servings

6 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
3 large eggs
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 cups chopped nuts

1 .   Sift together first five ingredients; set aside. In a bowl, cream butter and sugars. Add eggs, vanilla and lemon extract; beat well. Add dry ingredients; mix well. Stir in nuts.

2.    Divide dough into four parts and shape into 1-1/2-in. x 11-in. rolls. Wrap in foil and chill overnight. Slice cookies 3/8 in. thick.

Bake on greased baking sheets at 350° for about 10 minutes.

    Oh my, these look so good! I haven't had breakfast yet and now I want to eat these all up. So easy and I love Ice Box Cookies. Enjoy anything with cinnamon and nuts.....I saw the amount this recipe yields and I almost dropped to the floor. 102 servings. Wow, when you make a batch of cookies you really make a ton of them. But on the other hand you have the children and they must eat them by the tons. Now I see why you wrap them in four rolls...you can keep them so when you need more you can just slice and bake...terrific...I would love to make these...Thanks for this recipe I hope that you have a wonderful Sunday dear friend!

    1. Good evening Dottie ,
      They are delicious , easy peasy , but yummy good . I like to make large batches and I use nuts , raisins , cherries ETC , I always heave them on hand , that way I know what my kids are getting .
      They are also good when you have company drop by and wants to have a cup of coffee or tea , "Have a cookie;" . Yes they eat a lot of them but thankful my girls are learning to cook . I will see how long that last . Thanks for stopping by my friend . Have a safe and happy Thanksgiving Nee :).

  3. Hi Nee, these look delicious, wondering if refrigerating overnight gives them more flavor? I could eat dozens of these myself, love the flavor.
