BREAKFAST or BRUNCH SERVES 4
2 cups all-purpose flour
1 cup mashed sweet potatoes -- already cooked
2 eggs -- lightly beaten
1/4 cup milk
1/4 cup butter -- melted
3 tablespoons sugar
2/3 teaspoon baking powder
a pinch of salt
In a medium bowl, whisk together the milk, potatoes, butter and eggs. In separate bowl, whisk together flour, sugar baking powder and salt. Add dry ingredients to wet ones. Stir well. Cook waffles at your favorite setting.
I love sweet potatoes! I bet these taste amazing.
