Company coming , you want to serve something special that will make your guests think you spent hours in the kitchen . Well friends here we go , the Christmas fruit cake is still in a dark place getting drunk soaking up the liquor.(giggling) .
I told the kids lets try a fruit cake using cake mix and Dream Whip , I had lots of help with my do-overs . I only had one when I used to much water , it had to cook longer , but the kids didn't care .
In a hurry for a cake using cake mix and want it to taste homemade . Use the Dream Whip , the directions are on the box and for pies also and it sure beat the pudding in the mix . Hmmm hmmm good .
Fruit Cake
1 pound candied red cherries
1 pound candied green cherries
8 ounces candied pineapple, diced
1 cup pecan halves
1/2 cup walnut halves
1 cup dates, chopped
18-1/2 ounces spice (or your choice ) cake mix
1 package dream whip
3-1/2 ounces vanilla
3 eggs
1/2 cup vegetable oil
3/4 cup water
1/4 cup flour
GARNISH:
Karo light corn syrup
Directions:
1 . Preheat oven to 300 degrees.
2 . In a large mixing bowl combine all fruits and nuts.
3 . Add flour and toss until fruits and nuts are well coated.
4 . In another large mixing bowl combine cake mix, dream whip, eggs, oil and water.
5 . Beat for 3 minutes.
6 . Fold in fruit/nut mixture; batter will be very stiff.
7 . Grease and flour a 10 inch Bundt pan very well. (2 loaf pans or 15x13 pan)
8 . Bake for 2 hours or until toothpick inserted in center comes out clean.
9 . Cool completely in pan.
10 . Heat light Karo syrup until warm.
11 . Brush cake with warm syrup.
12 . When glaze and cake are cold cover with aluminum foil.
TIP :
You can also use Dream Whip in any flavor of your choice .
Well, it sounds like you and the kids had fun with this recipe, Nee. {giggling} Sorry, fruitcake just doesn't do it for me. I'm one of those people who would get more of a kick out of "tossing the fruitcake" on National Toss the Fruitcake Day" than I would out of National Fruitcake Day which is December 27th, lol...

ReplyDeleteWhat a beautiful Fruitcake! I am like a lot of people out there that DO NOT LIKE Fruitcake, even though it looks lovely. My sister-in-law's boyfriend loves Fruitcake and that is what I gave him last year from Swiss Colony. I am printing your recipe because next year I think I will make him one using your recipe. He has a sweet tooth and just goes nuts over Fruitcake. Seems he waits all year just to eat this. Your recipe is very different and easy, I love the idea of using the cake mix and the Dream Whip. DeleteMostly all fruitcakes is heavy and too sweet , this one is more like a nut cake with added fruit . I agree , not many people love fruit cake , especially the store brought ones .
I find using Dream Whip makes your cakes taste homemade and more light to the taste than pudding mix or mayo .
I am happy to hear you are feeling much better and getting your strength back . I am doing well ... but so far behind , almost caught up with everything .... what a relief .

Oh, my! Now I have to add this to my list of things to do! Son-in-law dearly loves fruit cake! I've not seen any candied fruits featured where I've been shopping this season - and I go to at least three stores weekly! Love this! Thanks for sharing it!

Dear Nee, I think we could all use a little help right now with a short cut or two. Using the cake mix helps so much when there is a crunch for time. Is is me or did these holidays arrive sooooo quickly!?

I have never heard of dream whip before. I'm guessing it's like cool whip?? I must say, Nee it does sound like a rich and delicious cake. There is nothing I love more than a boozy cake. That's the best way to serve a drink ;)

Nee, I baked this cake in three loaf pans! I wasn't sure about that 3 1/2 oz. of vanilla extract, though. That is a lot of vanilla - an entire bottle for some brands. Do you actually add that much vanilla? Anyway, the cake was well-received by our son-in-law. Had no trouble finding the fruit, though it is a bit expensive to make this cake! Oh! My loaf pans are not 9x5 but the smaller size of 8x4 1/2. Will plan this again. Hoping to buy some more fruit before it is all gone. Never can find it when it is time to bake Panettone or Twelfth Night cake.
