Pan Roasted Vegetables with Curried -Chicken

Prep :15 minutes Cook : 1 hour Makes 12 servings

2                pounds butternut squash in 1-inch cubes 
1-1/2         pounds brussels sprouts, halved
2               large red onions, cut into thin wedges
1               cup canola oil  , salt and freshly ground pepper
1               cup plain fat-free Greek yogurt, plus more for serving
2               tablespoons minced fresh ginger
2               large garlic cloves, minced
1               tablespoon Madras curry powder
4               pounds skinless, boneless chicken thighs

1 .    Preheat the oven to 450° and position racks in the upper and middle thirds. In a very large bowl, toss the butternut squash with the brussels sprouts, onion wedges and 1/2 cup of the canola oil; season with salt and pepper. Spread the vegetables on 2 large, sturdy rimmed baking sheets.

2 .     In the same bowl, combine the cup of yogurt with the ginger, garlic, curry powder and the remaining 1/2 cup of oil and season with salt and pepper. Add the chicken and toss until and the chicken is nearly cooked through. Pour off any accumulated liquid in the pans and roast for about 20 minutes longer, until the vegetables are thoroughly coated. Arrange the chicken on top of the vegetables. Roast for about 40 minutes, rotating the pans halfway through, until the vegetables are nearly tender  and the chicken is lightly browned. Transfer the chicken and vegetables to a platter and serve with warm  yogurt.

Make ahead the chicken and vegetables can be refrigerated overnight. Reheat gently before serving.

    Wonderful! This recipe is right up my alley. I love chicken with these veggies. The onions, butternut squash, and the brussel sprouts..wow, what flavors! As you said it is pure comfort foods for sure. The aroma must be amazing when roasting in the oven. I love the yogurt and spices as well.     I love trying different things and trying to use other meats and not much beef , I am also not cooking as much starchy foods ... the cholesterol you know and giving my kids good eating habits . It's so easy t eat healthy . I roast more foods in fall and winter and the spices to makes the house smell homey . Thanks for stopping by :)

    Thank you so much for telling Dottie about the update. I think it's fixed now but one never knows, lol...

    I LOVE the combination of veggies in this dish. Not something I would even think to do. They are the colors of Fall with the greens, oranges and reds, lol...

    I love "marinating" chicken in yogurt. Funny thing is, I don't usually use the yogurt after marinating. Which reminds me, I need to make some fresh yogurt. I'm going to try a low-fat version. The last time I tried I wasn't pleased with it but I'm going to try again and perhaps add non-fat dry mik we'll see. Do you make yogurt Nee? Just curious:)

    I was more than happy to tell Dottie , I guess with kids , I watch everything now they keep me on my toes .

    I also marinates not only chicken but the other white me (pork) I use different things such as buttermilk , mayonnaise spices with wine (giggling) I tried to make my own yogurt and followed the recipe to a 'T' but it didn't turn out well ... maybe I will try again soon (I did say maybe) . I buy the low-fat yogurt better than throwing the meal out (giggling)

    Dear Louise , as you have said many times sharing is the name of the game . Well sweetie that's what I'm hear for to remind people I am so bad ,ain't I . Hahahaha!!!
