Pecan Pie with a touch of Bourbon

Pie Crust :
2 cups all-purpose flour

cups light brown sugar
¾ teaspoon  fine sea salt
1 stick unsalted butter
7 tablespoons unsalted butter

Filling:
½ cup granulated sugar
¼ cup light brown sugar

1½ teaspoons all-purpose flour
½ teaspoon  fine sea salt
4 large eggs
1½ cups cane, sorghum or dark corn syrup, or honey
3 tablespoons bourbon
1½ tablespoons unsalted butter
1½ tablespoons pure vanilla extract
1¾ cups unsalted pecan halves

1 .  Make the Piecrust: In a bowl, whisk the flour with the brown sugar and salt. Stir in the butter until the dough comes together into a ball. Transfer the dough to a deep 9-inch glass or ceramic pie plate. Using your fingers, press the dough over the bottom and up the side of the plate to the rim. Crimp the edge with your fingers or a fork. Refrigerate for at least 20 minutes or up to 3 days.

2 .  Make the Filling: Meanwhile, preheat the oven to 350 degrees F*. In a bowl, whisk both sugars with the flour, salt and eggs until smooth, then mix in the syrup or honey. Add the bourbon, butter and vanilla and fold in the pecans.

3 .  Pour the filling into the chilled crust and transfer the pie to a foil-lined baking sheet. Cover loosely with foil and bake for 1 hour, until the filling is nearly set. Transfer the pie to a rack and let cool completely, about 4 hours, before serving.

    I hope that your Thanksgiving was a good one and you are not tired...We had a good one too but I was tired. Then I looked at you blog and I thought I had made a comment already, but I didn't. It was Pam's blog, she had a Pecan pie on her last post. So sorry, but here I am...as I told Pam..I have never had a piece of pecan pie, can you believe that! Yes, being from the north and NY, we really do not make many of these pies. Your recipe like Pam's look amazing. If I ever ventured to make one your recipe is the one I would choose. I know being from the south you eat this more often. It maybe too sweet for me, but I do love pecans and a touch of bourbon would be nice...so someday I will try this...It really is so simple and looks very good..Thanks dear Nee for sharing...have a great rest of the weekend....

      Thanksgiving was great , as usual ate to much , now I am kicking back with my feet up .
      You are not late , just in time , everyone is relaxing and enjoying the holiday and family and as you said , just tired from having so much fun .
      A lot of my husband's family live in New York and we shipped them pecans , they and their friends love pecan pies , my family there also like pecan pies . , hubby says the south meets the north .
      I saw Pam's pie , her's looked really tasty , it's hard to mess up a pecan pie unless you cook it to long . I am glad you had a wonderful Thanksgiving with your dear family , put your feet up and relax . Take care and blessings . Thanks for stopping by . Wiggle those toes .

    Bourbon in Pecan Pie sounds so darn yummy. I made cranberry relish with Bourbon but it didn't go well for anyone but me, lol...I'll have to try jazzing up some pecan pie next time and not tell anyone, lol...

    Don't worry your pretty little head , you are here now that's what count .
    you are so right the family stuffed themselves , Hubby's dad and wife is here and will stay until after the first of the year . They came in for Jonny's birthday and Sha's is next month .
    I will have to sent you a note .
    I made 3 pecan boozy pies for Thanksgiving , put them in the freezer , pecan pies freeze well .
    I gave the kids a hug and dad asked where was his . I told him you sent it by UPS , he said well it will get here , he don't trust UPS .
