Beef Provencal

Prep / Total time : 2 hours  30 minutes       Serves  6 to  8

Seasoning :
3                pounds  boneless beef chuck, cut into 1 - 1/2 inch pieces
All purpose flour, for coating beef
1-1/2         teaspoon  kosher salt
1/2            teaspoon fresh ground pepper

Saute :
3              tablespoons olive oil
1              large white onions, coarsely chopped
4              garlic cloves, minced
1/2           cup red  wine

Ingredients:
6              new red potatoes, peeled and half
1/2           pound  white mushrooms, quartered
4              large carrots, peeled and sliced in 1/4 inch-thick pieces
1              cup fresh peas, or 6 oz. frozen, thawed
1              cup Kalamata olives
4              sprigs parsley, minced

Seasoning :
Preheat over to 325 degrees. Place flour, salt and pepper in zip-lock plastic bag. Add beef chunks and coat evenly, shaking off excess.

Saute :
Heat olive oil in heavy large Dutch oven over high heat. Add half of the beef and brown well on all sides. Transfer beef to plate and continue to sear remaining half and transfer beef to plate. Add onions to the Dutch oven, sauté until soften.

Ingredients:
1 .  Add garlic, continue to sauté. Add wine scraping pot. Add chicken broth, orange strips, bay leaves, herbs and chopped tomatoes. Bring to a simmer. Add meat. Return to a simmer and cover Dutch oven and place in preheated oven for 1 hour.
3 .   After an hour, add potatoes, carrots and mushrooms. Simmer until meat is tender, 1 -2 hours. Remove and add peas and olives Stir together
4 .   Serve in soup bowls, sprinkle with minced parsley.

Pairing:
An herbal, spicy Cabernet Franc , Sauvignon Blanc or a juicy, bright Italian red.

  3. Dear Nee, Happy Fall, a perfect meal for a cool fall day! I haven't had this type of dish in a long time. My mom would make something very similar to this. A real hearty dish, even though there are potatoes in this, I would love a chunk of Italian bread to soak up all the juices. I can smell it from Long Island. Love your wine pairing too.       Happy Fall to you , the weather is nice and breezy , not to warm , just beautiful .
      I cook lots of potatoes in my soups and stews , potatoes is healthy and has lots potassium in them which is good for high blood pressure . Also they have no fats , cholesterol or fats . I always serve garlic bread with this dish .
      My aunt says I should do pairing . Maybe I will , will see how it goes , there are so many good wines out there . The dish do may the house smell homey . Blessing to you dear Dottie and your family , thanks for stopping by :) ~~Nee~~

    Happy Fall to you and all those lovely cherubs down there:) What a yummy looking meal. I haven't been eating much beef lately but every once in a while I do prepare it for Marion. She would love this dish especially with the addition of Olives, lol...(btw, did I miss how much wine to add?)

    Happy Fall right back at you , the awesome foursome has me jumping through loops , see I forgot the wine (corrected) .
    I also make this dish with turkey breast only I use white wine .

    I am so proud of you and I will give the kids some hugs and tell them it's from the cookie lady Mrs. Louise , they make those cookies 2 or 3 times a month , now they do them along until the baking . You give Marion a hug and ask her can she dance like the Genie ( I am so bad )

    1. Marion said she will dance like a Genie as soon as you and your magical family come for a visit, lol...Of course, you must wait until she is finished crocheting her latest baby blanket. She just found out she is going to be a Great, Great Grandmother for the first time!!! Yes, two greats, lol...

      It thrills me to know the kids are baking those cookies all by themselves now, with the exception of the oven. My daughter says the grandkids are baking them too, lol...Why is it I have no cookies I wonder, lol...

      I thought it would be a good exercise for you ... ain't I bad or as hubby says naughty.

      I know they are having a ball learning to cook . Michele is a wonderful mama , so many don't take time with their kids .
      Jenny (second girl) told Jonny (oldest boy) that he better learn to cook because his wife would go crazy with him asking her what's to eat . ;- D .
